2012 CABERNET SAUVIGNON

Vinification note.Close monitoring in the estate vineyard ensured that the grapes for this wine were harvested at optimum ripeness, with strong red berry characters and ripe dense tannins. The small berries were picked in the cool of the night and crushed before cold soaking for four days. During this cold soaking period, gentle pump overs extracted the lovely juiciness of this wine. Thoughtful yeast selection and careful cap management during the cool ferment added complexity to the wine while capturing the proud expression of the vineyard. Post alcoholic and malolactic fermentation, the wine was transferred to new fine grain French oak barrels for maturation. After 24 months, the best barrels were racked, blended, fined, and stabilized before bottling.
